Staying healthy during the Holiday's can be somewhat of a challenge - however if you get prepared do a little leg work prior it can be a much smoother / healthier time of year. I love mason jars - for so many things - desserts - individual soups for parties - drinks with cute little straws of course - salad's to go - pickling (gonna try my hand at pickling ginger this week) and for salad dressings on the fly. I want to share with you my GREEN DRESSING - I make 2 or 3 batches a week and keep one handy all the time. I try and load up on my veggies so I'm not as temped to dive into the "sugar fest" I call Christmas. If you know me you know this in an on going battle throughout the year for me. I LOVE MY SUGAR!
|Few Simple Ingredients & Your Set|
*This will last for up to 2 weeks*
1 cup of cold-pressed extra-virgin olive oil 1/2 cup apple cider (organic) vinegar
1 tsp of Dijon mustard
1 tsp of honey
1 large clove garlic, crushed
Pinch of Kosher salt and freshly ground black pepper to taste
(you can also add juice of one fresh squeezed lemon as option)
THAT'S IT PEOPLE - SHAKE ALL THE INGREDIENTS IN YOUR
MASON JAR TO EMULSIFY!
Take one to work - with bag of salad (love my freezer bags too) and you have a great inexpensive lunch - add can of tuna or hard boiled egg to up your protein!
